What makes us 'green'? Here at Oost, we'd love to create a lovely place where tranquillity, enjoyment, and connection with yourself and nature take centre stage. In everything we do, we stay true to our own nature. And we always ask ourselves whether something could be done differently, better, closer to home, or more consciously.

We're delighted to share our green ambitions with you, which have now been recognised with admission to the SLH considerate collection and a Green Key Gold certification. Additionally, our restaurant het Kook Atelier is affiliated with Dutch Cuisine, and the MICHELIN Guide NL 2021 has embraced our Served by Nature concept.

Served by Nature

In our restaurant het Kook Atelier, you can enjoy our Nordic & Botanical Cuisine. The signature Served by Nature menu gives nature the highest and final word, where growing, preserving, and foraging take centre stage. Our menu changes in detail daily thanks to the wild herbs we (respectfully) forage. We also love transforming guilty pleasures into conscious moments of indulgence, such as with our vegan foie gras and homemade botanicals.

Living in the moment 

You can choose to do things differently every day. And we love doing just that. Wherever possible, we choose products that are naturally available at that moment and within 'arm's reach'. This way, we limit logistics flows, honour craftsmanship, and support local home and professional producers. Together with our suppliers, we look at what could be greener and how we can best align our demand with their supply. We work closely with the neighbourhood to share harvests and prevent waste.

 

Trash to Treasure

We go just a step further than simply separating waste. We only consider something waste when we truly can't do anything with it. In our kitchen, we cook from nose to tail and bone, make our own kombucha, kefir, and botanicals from wild flowers and herbs, and all vegetarian food scraps are processed into chicken and peacock feed. Rainwater is collected to water the garden, and glass jars are transformed into vinegar, herb oil, or gift packaging.

Botanicals & natural wines

You won't find cola or orange squash here. Why? Because it can simply be done differently and better. The unique herbal infusions from the garden or intense homemade kombuchas might surprise you. Our wine list is far from standard and is happy to introduce you to lesser-known 'big names' and undiscovered wine regions. From micro cuvées to biodynamic natural wines. If you prefer a local craft beer, we're delighted to make you happy with that too.

Wild foraging

Oost, like many Texel farms, is surrounded by hedge banks. Green boundaries with wild herbs, or wild foraging. An important ingredient for our restaurant het Kook Atelier. From yarrow to nettle, wild blackberry and purslane. Take along the book by Leoniek Bontje or Edwin Flores and discover all the wild herbs of Oost.

Edible garden

Our garden is almost entirely edible. From sage to rugosa rose, gooseberry and elder. Feel free to pick some fresh herbs for your own herbal tea or nibble on the strawberries. In the saline vegetable garden boxes, you'll find our saline cultivation. A lovely alternative to conventional cultivation and much more sustainable. These flavour enhancers grow on saline soil. Fancy having a go yourself? Take home a seed packet, the book Zilt, and a cutting.

Bees

These darlings are so important for tomorrow's world. In the front garden near the wild and edible flowers stands their home. Don't be afraid—they won't bother you. But they'll happily feast on all the flowers in the garden, the flowering lamb's ear by the salt marshes, and beautiful flower gardens near Oost. We're already looking forward to our first home-produced honey.

Green sleeping

Guests in our hotel enjoy a conscious night's sleep with natural Coco Mat beds and homemade soap in the room. The soap and shower gel (also suitable as shampoo) is completely vegan, biodegradable, and based on 100% natural ingredients and colourants. Our sheets are made from eco linen, and all cleaning products are biodegradable too. The beds are made from exceptionally sustainable materials such as natural latex, seaweed, and coconut fibre.

We start the morning with our vegetarian breakfast in a picnic basket. No endless buffet, but a consciously composed breakfast with ingredients from nearby.
